Ingredients
For the Meatloaf
1 pound ground beef (80/20 for best flavor and moisture)
1 large egg, lightly beaten
1/3 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup milk
2 tablespoons Worcestershire sauce
Salt and black pepper to taste
For the Bourbon BBQ Glaze
1/2 cup ketchup
1/4 cup packed brown sugar
2 tablespoons bourbon (or apple juice as an alternative)
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
For the Mashed Potato Topping
2 large russet potatoes, peeled and cubed
1/4 cup milk or heavy cream
2 tablespoons unsalted butter
Salt, to taste
Additional
6 slices of bacon, cut in half (12 pieces total)
Optional garnish: chopped parsley or chives
Instructions
Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15 minutes. Drain and mash with butter and milk. Add salt to taste, then whip until light and creamy. Set aside.
In a mixing bowl, combine ground beef, beaten egg, breadcrumbs, onion, milk, Worcestershire sauce, salt, and pepper. Mix just until combined to keep the texture tender.
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin pan. Take half a slice of bacon and wrap it around the edge of each muffin cup to form a ring.
In a small bowl, stir together ketchup, brown sugar, bourbon or apple juice, vinegar, and smoked paprika. Mix until smooth and set aside.
Spoon the meat mixture into each bacon-lined muffin cup, pressing gently to shape. Top each with a spoonful of the bourbon BBQ glaze.
Place the muffin pan in the preheated oven and bake for 25 to 30 minutes, or until the internal temperature reaches 160°F (71°C). Remove from the oven and let rest for 5 minutes.
Spoon the mashed potatoes into a piping bag with a large star tip, or use a plastic bag with a snipped corner. Pipe the mashed potatoes on top of each meatloaf cupcake like frosting. Add optional herbs for garnish and serve immediately.
