Ingredients
For the burger filling:
1 lb ground beef (80/20 preferred for flavor)
6 slices cooked bacon, chopped
1 cup shredded cheddar cheese
Salt and black pepper to taste
Optional: chopped pickles or jalapeños for added zing
For the cornbread batter:
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1 large egg
1 cup buttermilk (adjust consistency as needed)
For frying:
Wooden skewers
Vegetable or canola oil for deep-frying
Paper towels or a wire rack for draining
Instructions
Start by combining the ground beef, chopped bacon, cheese, and seasoning in a large bowl. Form small meatballs—about the size of a ping-pong ball. Press slightly to flatten like sliders. Chill these patties in the fridge for 20–30 minutes so they hold together during frying.
In a hot skillet, lightly sear the patties for about 1–2 minutes per side. They don’t need to be fully cooked, as they’ll finish cooking in the oil. Let them cool slightly, then insert a wooden skewer through each one.
Whisk together the dry ingredients in a bowl. In a separate bowl, beat the egg and add the buttermilk. Combine the wet and dry mixtures until smooth. If it’s too thick, add a bit more buttermilk. Pour the batter into a tall glass for easy dipping.
Pour oil into a heavy pot or deep fryer until it reaches about 3 inches deep. Heat to 350°F (177°C). Use a thermometer to monitor and maintain the temperature.
Dip each burger skewer into the batter, coating it fully. Let excess drip off briefly, then carefully lower it into the hot oil. Fry until golden brown, about 2–3 minutes per side. Don’t overcrowd the pan. Remove and let drain on paper towels or a wire rack.
