1. Prepare the Cilantro Lime Slaw:
- In a large bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
- Pour the dressing over the cabbage mixture and toss to coat evenly. Set aside in the fridge while you prepare the fish.
2. Prepare the Fish:
- Cut the fish fillets into strips or small bite-sized pieces, depending on your preference.
- In a shallow dish, combine the flour, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
- In another dish, whisk the egg. In a third dish, place the breadcrumbs.
- Dip each piece of fish first into the flour mixture, then the egg, and finally coat with breadcrumbs.

- Warm the tortillas in a dry skillet or microwave.
