Ingredients
4 large yellow or sweet onions
1 lb ground beef
1 cup shredded cheddar or cheese cubes
½ cup breadcrumbs or almond flour (for low-carb option)
1 egg
¼ cup whole milk
1 tsp garlic powder
1 tsp onion powder
1 tbsp Worcestershire sauce
Salt and pepper to taste
12–16 slices of bacon
Optional: BBQ sauce or glaze
Instructions
Cut the top and bottom of each onion, remove the skin, and separate the outer two layers into cups. Mix the ground beef with breadcrumbs, egg, milk, seasonings, and cheese. Form into meatballs and sandwich each one between two onion halves. Wrap tightly in 3–4 slices of bacon, securing with toothpicks.
Oven Method: Preheat to 375°F. Place bombs on a rack in a foil-lined tray. Bake 40–50 minutes until internal temp is 160°F. Broil for 2–3 minutes for crispiness.
Grill Method: Cook over indirect heat at 275°F for 1.5–2 hours. Add BBQ glaze in final 15 minutes if desired.
